For those who wish to celebrate the
New Moon with a
dark cake, this recipe is quick, easy
and very yummy!

1 stick butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla
1/2 cup sour cream

1/2 cup cocoa
1 cup cake flour
1 tsp. baking soda
1/4 tsp. salt
Preheat oven to 350F. Cream together butter and sugar. Add egg. Beat in
well. Add vanilla. Sift together dry ingredients and gradually add to
butter/sugar mixture, alternating with the sour cream. Mix till thoroughly
blended and add the 1/2 cup hot coffee. Pour into a greased and floured 9 inch
round cake pan. Bake 25 to 30 minutes or until toothpick inserted in the center
comes out clean. Let cool. If desired, sprinkle with powdered sugar or frost.
If you want frosting, here is a good recipe that goes with
this cake.
Light Chocolate Frosting
1/2 stick butter
2 cups powdered sugar
1 teaspoon vanilla
2 Tablespoons sour cream
1&1/2 to 2 Tablespoons cocoa
Cream together well. If frosting is too stiff, add more sour cream or a little
milk until you have a good spreading consistency.
